Tried several homemade pad thai dishes but this was too "fishy" and I think it was from my dried shrimp. The sauce was pretty good though. Not too sure about the sweet and dark soy sauce but it added more of the umami IMO. Anyone recommend a good dried shrimp?

Pad Thai came out to tasting too shrimpy
I have basically the same wok, blued, but it doesn’t last that way past the seasoning process. They say use more heat but all that does is start smoking. Don’t have a wok burner but take off center burner cap. What am I doing wrong?

So I know you said not to replace anything, But to make the pad thai sauce I replaced tamerind with tomato I crushed it just to make it pasty. I replaced the Palm sugar with Normal sugar. The fish oil with Olive oil and some garlic. And then for the heck of it I had to be the origano and some other herbs. Turn out to be good sauce.
I couldn't really be bothered preparing the chicken. So instead I bought a pizza base.
And noodles wise I didn't have any noodles so I decided to grate some cheese.
The shrimp thing…again couldn't be arsed going to the Asian store so instead I used a bit of basil ..fresh basil.
So I don't have a wok but I do have an oven decided to just check everything together and had a great margharitta pizza.

This thing is the most beautiful Pad Thai I’ve ever seen.
There are 2 types of preparation of pad Thai noodles.
1. Soak in water to restore a little. Then stir until soft in a pan along with the sauce. This will allow the noodles of the pad-thai to absorb moderately the sauce into the noodles for a typical recipe.
2. Do not soak in water Put the noodles of Pad Thai in the pan and stir-fry with the sauce until soft. This method uses a larger amount of sauce. But it will make the noodles of the Pad Thai absorb more sauce into the noodles of the Pad Thai. the taste is very good But it's a rather difficult way to control the amount of water and sauce you have to add.

My second time making it. Fantastic!!! I doubled the chicken and did 9 oz of noodles. I cooked my eggs in a separate pan, because my first time I mixed before fully cooked and got everything stuck together. Lesson learned, I will probably make this in another week. Better than take out.
